We get it, you're busy, but here's a tip to help you stay on track with healthy eating habits. Look for versatile recipes that are large enough for left overs, keep well, and can be consumed hot or cold. This way, you can spend 20 to 30 minutes of prep time but eat from the same meal multiple times throughout the week!
This gluten free, mushroom and arugula quiche is perfect! (Remember you can swap ingredients and add a side salad or protein as well!)
