Kombucha - Recipe for a Healthy Gut
Ingredients Per Gallon:
1 cup granulated sugar
6 tea bags (black, green or mix of the two, ie. 3 black/3 green)
SCOBY - Symbiotic Culture Of Bacteria
2 cups previously brewed kombucha (from a jar with SCOBY)
1) Purchase Kombucha Starter Pack - you can find this on Amazon!
Includes: 1 SCOBY and 2 cups of Starter Kombucha
*Or you might find a friend who already makes Kombucha with a SCOBY they can split for you and 2 cups of Kombucha they will gift you.
2) Brew Tea & Add Sugar
In a large pot, bring water to boil and turn off heat. Add tea bags and steep for about 7 minutes, after you remove the tea bags then add sugar. Stir and let it cool completely. Sugar should dissolve most of the the way.
3) Combine Tea & SCOBY
In a gallon glass (ie. big ole’ pickle jar works), add SCOBY, tea/sugar mix and 2 cups of previously made kombucha. Fill the rest of the gallon jar with filtered water but leave a few inches of room at the top.
Cover with paper towel secured with a rubber band (this keeps the bugs and dust from getting in) and put in a pantry closet or on kitchen counter top to ferment for 7-10 days. It is okay if SCOBY isn’t floating at the top (it will later).
5) Taste & Bottle
After 7 days start tasting kombucha. If it isn’t sweet, has a tangy taste, fizzes as you mix and SCOBY is floating at the top, then your kombucha is ready.
Pour using a funnel into airtight cap bottles (ie. mason jars work) and enjoy!
You can add a few pieces of chopped up fruit to flavor it, however I think it tastes great the way it is!
